FOOD FOR THE SOULAyurveda Winter Recipes: PARSNIP, POTATO & CARROT SOUP WITH TURMERIC
Bitter, rough parsnips softened by cooking. Cut with turmeric for digestibility and depth. Garnished with pungent, cooling cilantro.
Ingredients
1/2 tsp BLACK PEPPER
4 whole CARROT
1/4 c CILANTRO
1 tsp CUMIN
2 clove GARLIC
1 inch GINGER (FRESH)
2 c PARSNIP
2 whole POTATO
1 tsp SALT (MINERAL SALT)
1/4 c SUNFLOWER OIL
1 tsp TURMERIC
1/2 c YELLOW ONION
Instructions
Fry the onions in the oil in a large pot. Add chopped garlic and ginger and fry for another thirty seconds. Add remaining ingredients and fill with water twice the height of the vegetables. Boil until soft. Garnish with cilantro. For a fresh, vibrant taste, add the juice from one carrot to the soup after cooking. Blend if desired for a creamier soup.
