Ingredients
1/4 c RAISINS
1 tbsp MINT
1 c CUCUMBER
1 lbs ARUGULA
1 lbs RED LEAF LETTUCE
1/2 c BARLEY
1/2 tsp DILL
1/4 lbs ENDIVE
Instructions
In a pot, simmer barley in boiling water for 25-30 minutes or until soft. Strain excess water and allow to cool.
Chop salad leaves and cucumbers as desired.
Coarsely chop raisins.
Mix all ingredients together gently and serve.
