Christmas Recipes With Ayurvedic Twist

We can be conflicted this holiday season about choosing between eating wholesome foods or enjoying seasonal goodies. Ayurveda can assist us in achieving both at once, as well as one of its Four Aims of Life: enjoyment. Here are a few straightforward holiday recipe modifications that will sate your sweet tooth, appetite, and Agni.

Coconut Cream of Squash Soup

Preparing soups in a puree is beneficial for Vata because of the liquid, warm, and soft qualities, which make it simple for Vata’s irregular digestion to handle. Pureed soups are light and easy to digest, so they can be eaten for dinner, or as a first course to your main meal at lunch time. The sweet, grounding qualities of the squash make this a wonderful seasonal recipe.

Ingredients:

1 medium butternut squash

1/2 tbsp sesame oil

1 cup coconut milk

1/2 cup water

1 tsp paprika

1/2 tsp Trikatu

1/4 tsp ground coriander

1/2 tsp ginger powder

1/4 tsp turmeric

1/2 tsp salt

Fresh parsley for garnish

Directions:

1. Preheat oven to 425°F.

2. Carefully halve the squash from stem to bottom and scrape out the seeds, using a fork, into a bowl.

3. Mix the seeds with salt and sesame oil. You can also add 1/2 tsp of cooking spice if you want seasoned seeds.

4. Carefully cut 1-inch-sized checkered slits into the center of the squash.

5. Place the squash facing up on a baking tray with the seeds spread on one side of the tray. After 10 min, stir up the seeds to roast evenly; remove after 20, or when crisp.

6. Roast the squash for 40-45 minutes, until tender.

7. Remove the squash from the oven and let it cool for 20 minutes.

8. Scrape out the entire meat of the squash into the blender, using a fork.

9. Add the coconut milk and water into the blender and blend on the smoothie setting until fully blended.

10. Transfer the puree into a medium pot and heat on medium-low.

11. Add the spices and salt. Let simmer, covered, for 5-10 minutes while the spices infuse. If you notice too much thickening of the soup due to evaporation, add a few tbsp of water.

12. Serve, decorate, and garnish with a swirly drip of coconut milk, roasted squash seeds, and parsley.

Roasted Rice with Dates, Cinnamon & Cardamom

In Ayurveda, the word for juicy, sensual vitality is "ojas." Some special foods have lots of ojas, and, as it happens, you can eat them if you feel the need to increase your sense of vitality and juiciness. (There are probably not many people who don't yearn for that sweet sensuality in life.) In the ancient texts of Ayurveda, Ojas is said to have the smell of toasted rice. The main two ingredients in this recipe, dates and rice, increase ojas in your body, thereby giving you a healthy, happy glow.

Ingredients:

1 c Basmati Rice

1/4 tsp Black Pepper 

1/4 tsp Cardamom

1/4 tsp Cinnamon

4 whole Dates (Dried) 

1 tbsp Ghee

2 pinch Salt (Sea Salt) 

3 c Water

Directions:

1. Chop dates. Heat a medium saucepan on low, and add ghee. When it melts, add uncooked rice. Stir continually for 2-5 minutes, until it smells sweet and all the rice is coated with ghee.

2. Add the spices and dates. Stir for one more minute. Add water and bring to a boil. Cover the pot and lower it to a simmer.

3. Cook until rice is tender about twenty minutes.

Cardamom Cherry Pie

Cherries are an excellent way to nourish your blood (rakta). High in iron, cherries rebuild deficient anemic blood. Cherries' warming, blood building nature is perfect for December. Decembers cold temperature creates blood stagnation. However, their warming nature can aggravate pitta. In winter, the skin turns pale with the cold. Cherries are a skin tonic whose sweetness and sourness moisturizes your skin while restoring a healthy red glow.

Ingredients:

1/2 tsp Cardamom

3 c Cherry 

1 tbsp Corn starch

1 c Ghee

1 tsp Ginger (dried)

3/4 tsp Raw sugar

1 tsp Salt (Sea salt)

2 c Splet flour

Directions:

Crust

1. Add the flour, sugar, and salt in a large mixing bowl. Mix thoroughly.

2. Cube chilled butter. Add it to the dry ingredients, rubbing it in with your fingertips. Work until nearly smooth.

3. Slowly add 1/2 cup of very cold water, teaspoon by teaspoon. Gently work the water into the dough with a spatula or wooden spoon until all flour is incorporated into the dough. Knead the dough just a few times, and press into a rough ball shape.

4. Flatten dough into a circle. Wrap in plastic wrap, and chill for at minimum one hour.

5. Remove from refrigerator, and roll out into a pie crust shape. This recipe calls for only the bottom crust, but feel free to be creative and add a top if you like.

Filling & Finish:

1. Preheat oven to 325 degrees.

2. If preparing with dried cherries, use 1 1/2 cups dried cherries and 4 cups water to rehydrate them. If fresh, use 3 cups cherries and and 2 1/2 cups water. In a medium saucepan, add ginger, sugar and cherries and water. Simmer the mixture for one hour. Now, add cardamom and cornstarch. Simmer ten minutes or until mixture thickens.

3. Meanwhile, place crust into a pie pan, pressing the dough into the corners. Bake the crust for fifteen minutes or until golden brown. Remove from oven. Pour the cherry mixture into the crust. Mixture will continue to thicken as it cools.

4. Serve hot!

Maple Cream Walnut Cookies

These yummy cookies feature several brain foods: tahini, walnuts, and almonds all contain juicy fats that nourish your brain. How does that help you? The grounding effects of healthy fats calm the mind, and soothe your nerves. And lets face it: the holidays can be stressful! Here's a cookie that calms your emotions with it's rich sweetness and physiologically with nourishing, grounding, loving fats.

Ingredients:

2 c Almonds

1/2 tsp Apple cider vinegar

2 tsp Cinnamon

1 tsp Coconut oil

1/2 c Confectionary sugar

2 whole Egg whites

1/4 c Maple syrup

1/2 tsp Nutmeg

1/4 c Raw sugar

1 pinch of Salt (Sea salt)

1/3 c Tahini

1/2 tsp Vanilla extract

3/4 c Walnuts

Directions:

Cookies

1. Preheat oven to 325 degrees. Line 2 cookie sheets with foil. Grease with coconut oil.

2. Grind almonds in a coffee grinder or food processor until it becomes a fine power. Don't go too long, or it will become almond butter. Feel free to use store-bought almond flour.

3. Mix almond paste and granulated sugar until smooth. Add confectioners' sugar and 2 egg whites; again, mix until smooth. This works great with a food processor. If mixing by hand, be very thorough.

4. Coarsely chop walnuts and mix them into the dough.

With lightly floured hands roll dough into 1 inch balls. Arrange balls on cookie sheets, and flatten slightly to form a 1 1/2 inch round.

5. Bake 15 to 18 minutes in the preheated oven, or until lightly browned. Let stand on cookie sheet 1 minute. Transfer to wire rack to cool.

Maple Tahini Icing

1. Place the maple syrup in a small saucepan; cook over low heat for about 3 minutes. Then, turn off heat and mix in the tahini, vanilla, and salt.

2. Mix vigorously until it's very smooth.
