1/2 c YELLOW ONION
1/2 c COCONUT MILK
1 tbsp CURRY LEAVES
1 tbsp COCONUT OIL
2 tsp CURRY POWDER
1 tsp SALT (MINERAL SALT)
1 c RED BELL PEPPER
1 c ASPARAGUS
1 tsp RED PEPPER FLAKES (CHILI)
1 lbs CHICKEN

Instructions

  1. Place iron skillet on medium heat. Add coconut oil to pan and allow to melt. Add onion and saute until caramelized.

  2. Meanwhile, pat chicken with curry powder.

  3. Add asparagus and red bell pepper to the pan and cook for five minutes. Then, add curried chicken to pan and allow to cook thoroughly (approximately 10 to 15 minutes).

  4. Add 1/2 cup coconut milk and 1 curry leaf and turn temperature down to low. Allow to simmer for 15-20 minutes, or until the flavors are well assimilated.

  5. Remove from heat. Add salt and pepper flakes at the end.


    Serve warm with a pot of coconut rice
