Clancy Lester, a 23-year-old Australian ecologist known as the "Bee Man," is dedicated to protecting native bee species across Australia. His mission began after spending time with the Yolŋu Aboriginal people in the Northern Territory, where he witnessed how declining native bee populations were impacting their traditional practices and culture. For the Yolŋu, native bee honey is not just a food source but also features in their cultural traditions and stories. This experience lit what he calls a "fire in his belly" to take action.
Drawing inspiration from Steve Irwin, Lester now travels throughout Australia conducting educational workshops and conservation projects. His main initiatives include building bee "hotels" - artificial structures that simulate natural nesting environments for solitary bees - and teaching communities how to create bee-friendly environments through native plant gardening and converting public spaces like median strips into native flower beds. He has helped establish 800 bee hotels across Australia and provides free online resources for others to build their own. His work is particularly important given Australia's high number of solitary bee species, which are threatened by habitat loss and pesticide use in agriculture.

Chop onions. Slice potato, carrots, beets and cabbage thinly. Place all ingredients in a pot and cover twice the height with water. Bring to a boil and simmer, covered, for one hour of more.
